Lawnmower de Saison (Extract)
A farmhouse saison style, light and refreshing, with orange peel, coriander and grains of paradise to give the finish a nice zest.
- 3.3 lbs Gold Liquid Malt Extract (LME)
- 3.3 lbs Wheat LME
- 1 lb Clear Candi Sugar
- 8oz Cara-20
- 8oz Unmalted wheat
- 1oz Sterling
- 2oz U.S. Goldings
- ¼ tsp Grains of Paradise
- 1oz bitter orange peel
- ½oz whole coriander
- Wyeast Belgian Wheat (#3942)
Steeping:
Steep grains @ 155°F for 30min in 2 gal tap water
Boil:
Add both LME’s and Candi Sugar (try not to scorch them on the bottom of you pot) stir until the LME and Candi Sugar is dissolved. You can hear the candi sugar bouncing around the pot, will take 5-7 minutes.
At first boil (60min), add 1oz sterling.
(30 min) add 1oz U.S. Goldings
(15 min) add ¼ tsp Grains of Paradise, 1oz bitter orange, ½ oz Coriander
(TIP: Based on my experience, i would recommend putting these loosely in a nylon bag or you may run into issues moving from primary to secondary)
(5 min) add U.S.goldings
Primary:
Cool wort to below 80°F, add to Primary fermentor, top with more water to make 5 Gal.
Take Hydrometer reading. Specific Gravity should be around 1.055-1.059
Aerate and Add yeast.
Fermentation:
Keep primary in dark place and when the temp is consistent (wrap in a dark blanket/cloth if needed) Keep in Primary for about 7 days and the FG is 1.012-1.016 then transfer to Glass Carboy for another 7-10days.
Bottling:
(I kegged mine in a 5 gal Corney) but for bottling sanitize 48 12oz Bottles. Boil 1 cup of water and 5oz priming sugar for 5 minutes. Cool, then add to secondary, GENTLY mix as not to stir up the sediment. Then using a siphon fill bottles cap and drink after 4 weeks.
